Asian Pasta Salad
Asian Pasta Salad
Dressing:
1/4 cup sesame seeds
1/4 cup chopped parsley
1/3 cup red wine vinegar
1/3 cup soy sauce
1/2 cup canola oil
3 T sugar
1/4 teaspoon salt and pepper
Combine all the ingredients in the blender. Make the night before.
Salad:
1/2 cup chopped green onions (about 1 bunch)
1 12 oz. bag of bow tie pasta - cook until al dente
1/4 cup slivered almonds - sugar in a skillet pan and cool
4-6 chicken breasts - cook however you want and then cut into chunks or slices
3-4 peppers: red, green, yellow, orange - chopped (the little peppers from Costco are fabulous and can be cut into rings, discard the seeds; use 6-8 of these.)
Fresh baby spinach
1. Combine the chicken, pasta, green onions, and peppers the night before or early the morning of the party...add 3/4 of the dressing and keep in the fridge in a sealed container. A
2. Add the remaining dressing, almonds and fresh torn spinach right before serving and toss all together *this is important because otherwise the spinach will be ruined.
And depending on how many people you are feeding, you may want to double the entire recipe...It keeps very well.

Flower Power Cake
Cake mix, canned frosting and food coloring
make our multicolored cake as easy as it is cool!
- 1 pkg. white cake mix, preferably Duncan Hines
- 3 egg whites
- 2 Tbs. oil, (canola)
- 20 drops each red, yellow and blue liquid food coloring
- 1/8 tsp. imitation cherry extract
- 1/8 tsp. almond extract
- 1/8 tsp. lemon extract
- 2 cans (16 oz. each) Vanilla frosting
- Assorted decorations and sprinkles, optional.
- Divide batter into 4 bowls. Stir red food coloring and cherry extract into 1st bowl. Stir blue food coloring and almond extract into 2nd bowl. Stir yellow coloring and lemon extract in 3rd bowl. Leave 4th bowl white.
- Alternately spoon tinted and white batters into pans.
3. Using spoon lightly swirl batters together, to make marbled pattern.
4. Bake 30 minutes or until tooth pick inserted into centers comes out clean. Cool in pans 10 minutes.
5. Remove from pans; cool completely on racks.
6. Place 1 cake layer on serving plate; spread with 1cup frosting. Top with remaining layer. Spread top and side of cake with remaining frosting. Decorate as desired.
Note. I make the cake with the directions on the box. And then continue with steps 1 and 2. so you could make it however you would like. If the cake mix calls for oil, I double the ration and add Apple sauce instead. That makes a more moist cake, and a bit more healthy. J )
