Crispy Quinoa Cakes

Last month i 'treated' myself to Vegetarian Times magazine while shopping at Whole Foods w/ my sister, Amy. Inside this magazine, i found this recipe that i simply fell in love with! (when i made it, i just left the Feta cheese out--for my sweetheart is not a fan of cheese--and I added it later as a garnish! it was pretty easy and had this great dipping sauce that i made in my vita mix!

I was so impressed with all that the magazine had to offer, i ended up ordering a 12 month subscription... Yay, it's like Christmas when i open my mail box once a month!

i love all the new, fresh and healthy ideas for my kitchen... :)

Enjoy!

body movin'...

Yesterday was the last day (of the first session) of Gymnastics! it's been an awesome 8 weeks! I've enjoyed taking Caitlin, Sydney and Claire after school... what a fun program they have a River City Youth Fitness! Caitlin LOVED it!
Victory stance!

Today Brinley and Mommy headed over to the school to watch Caitlin run in her P.E. Success Week 6 minute race! Cheering section...
Pre-race excitement...

good stretch before the race... ahhh!
:) beautiful day to be at a race!! Brinley kept saying, "I'm scared. I'm scared." I told her school is a FUN and HAPPY place! she was not so sure... she's so funny.
Look at my little Cheetah run!!
with each lap they grabbed a Popsicle stick to show how many times they went around!
5 1/4 laps! GREAT JOB BUG!
After she finished, she looked at me and said, "Mom! I ran the race just like you did!" That pretty much made my day! It brings me so much joy knowing that she was happy to be doing something that i enjoy doing, also. (and setting a postive example for my girl to take care of her body is like the ultimate 'yeee-hawww' of the day!)
class picture! Caitlin is in the back row, 2nd in from the Right!
After the race, i walked Caitlin back to her teacher and just then Will's class was getting ready to head to the lunch room! Brinley and I surprised him and sat with him for lunch!

...not scared of school anymore!
What a joy to be with my sweet children during the day!

United States Patriotic Symbols Project

All of the 1st grade students were to complete a 3-Dimensional Model of a Patriotic symbol. Washington Monument, The American Flag, The Stature of Liberty, or The Bald Eagle. At first Caitlin wanted to do the Bald Eagle out of Salt Dough, but we found out that it was pretty hard to sculpt a bald eagle... so we moved on to The American Flag!

Caitlin shaped her flag on a cookie sheet, and used a pizza cutter and a ruler to make the lines. We baked it in the oven @ 200 degrees (for almost 4 hours!) and spray painted it white. Then Caitlin painted it red and blue. We 'power glued' (with super glued) the star stickers on! She was very proud of her creation! She said to me, "Mom, i like THIS kind of homework!" (I had always enjoyed art projects as well, so it was a fun experience for us both!)

I actually forgot to take a picture of the finished product before she left for school on Friday. Here's a picture of it on display in the Library!
Way to go, Caitles!

We woke up early on Saturday morning and drove West... to our favorite little town East of the Mississippi... Buena Vista, home to Southern Virginia University. No words can express what this place means to us... It's where we fell in love and where we've made forever friends... every time we visit it's like we never left...

We LOVED coming HOME this weekend...
